"Pour obtenir un wet rub, ajoutez le liquide que vous souhaitez (bière, miel, huile, vinaigre, etc) à un peu de rub afin d’obtenir une consistance collante," conseille Raphaël Guillot. "Le wet rub (on le voit souvent sur les étals des bouchers) est plus particulièrement conseillé pour de la cuisson indirecte (l’aliment cuit sur la grille supérieure, à côté des braises. Ainsi, les jus vont tomber dans la cuve ou dans un bac récupérateur de graisses et non sur les flammes, ce qui ne calcinera pas votre aliment)."

Le SOPASCO
Cette recette a été créée par Raphaël Guillot. "Il s’agit de mon rub fétiche, celui qui m’accompagne partout. Cet acronyme est basé sur un profil de saveurs assez sucrées." Le SOPASCO contient : Sel/Oignon/Paprika/Ail/Sucre/Cassonade/Origan. "Ce rub est parfait avec toutes les recettes grâce à sa simplicité. C’est un rub typiquement texan qui sublimera parfaitement du bœuf."
Ingrédients : 20 g de sel, 20 g d’oignon en poudre, 20 g de paprika, 20 g d’ail en poudre, 40 g de sucre en poudre, 40 g de cassonade, 5 g d’origan
Préparation : Mélangez tous les ingrédients, et disposez le tout dans un contenant hermétique à l’abri de la lumière (cela se conserve six mois).
Le rub mexicain
Ingrédients : 10 g de poudre d’oignon, 7 g d’origan séché, 5 g de sel, 5 g de cassonade, 5 g de poudre d’ail, 3 g de piment fort (en flocon), 3 g de cumin, 3 g de poudre de chili (facultatif)
Préparation : Mélangez tous les ingrédients, et disposez le tout dans un contenant hermétique à l’abri de la lumière (cela se conserve six mois).
